Have you been frustrated by hard-boiled eggs that won’t peel without taking half of the egg with it? I used to have that problem with our fresh eggs, but not anymore. I started steaming my eggs and now I have perfect hard-boiled eggs every time!
First, I place a steamer basket into my large stainless steel pot. I fill the basket with eggs, usually a dozen at a time. It’s Ok if the eggs are crowded, but don’t stack them on top of each other. Fill the pot with water up to the bottom of the steamer basket.
Turn the stove onto high and put a lid on the pot. When the water starts to boil, set the timer for 12 minutes. Depending on the size of your eggs, you might want a minute more or less.
When the timer goes off, remove the pot from the stove strain off as much water as you can. Since I’m lazy and don’t want to get out the strainer, I just tilt the pot and let most of the remaining water drain out. Some will be still be left but that’s Ok. Fill the pot with cold water and add some ice cubes.
Let the eggs cool a bit and then place them in a container in your fridge. You’ll have perfect hard-boiled eggs ready for the rest of the week. I keep a folded paper towel or linen towel in the bottom of the bowl to absorb any moisture.
